Pear wood has been used to make biscuit moulds for almost 400 years.
Pear wood biscuit mould also called Springerle (it is a type of South German biscuit or cookie with an embossed design made by pressing a mould onto rolled dough and allowing the impression to dry before baking) or Speculaas (is a type of spiced shortcrust biscuit, traditionally baked for consumption on or just before St Nicholas' day in the Netherlands, Belgium, Luxembourg, and around Christmas in Germany and Austria) are great to make traditional German and Dutch Belgian biscuits or of course any biscuits.
Pear wood is a very fine grain, which is essential when an intricate designs is carved without splitting the wood. Pear wood moulds have been the wood of choice for German biscuit moulds for hundreds of years.
