- Pack tightly, leaving 2cm at the top. Keep contents submerged with a folded cabbage leaf or small weight. Secure the silicone lid and band. Ferment at 16–23°C out of direct sunlight for 5–14 days, then refrigerate.

Sauerkraut, kimchi, fermented pickles, and other lacto-fermented vegetable preparations. The airlock lid is also suitable for kombucha second ferment.
For vegetable ferments where keeping solids submerged is important, a glass fermentation weight is strongly recommended. EcoWarehouse stocks these separately.
It fits over the jar and allows CO2 to escape during fermentation while preventing oxygen from entering, which would cause mould. You fill the airlock with a small amount of water as the seal.
Most vegetable ferments are ready in 5-14 days at room temperature, depending on temperature and personal taste preference.
